It has been a week!
With a busy time at work, a crazy weekend, school registration and tons of leftovers, I ended up not cooking anything new for far too long. However, I ended up averaging right at $1.42 per day over the last week, which I am very pleased about.
My most recent new meal was black beans and lime cilantro quinoa, with a total cost of ONLY $0.64 per serving!
The beans included:
1 dry cup black beans
1/4 cup chopped onion
1 very large clove of garlic
1/4 teaspoon cumin
Chili powder, salt, pepper to taste
These took about 2 hours to cook, and were perfect and tender with just barely any water leftover! I’ve never cooked black beans before and was pleasantly surprised at how easy they were to cook – no soaking and no extra water needed.
The quinoa was just 1 dry cup of quinoa plus 1/2 cup chopped cilantro and the juice of one whole lime (copied from this recipe).
If I were to fix it again, I would definitely use about half the amount of lime and cilantro, as it was a bit over-seasoned (read: WAY too tangy).
Overall, the beans and quinoa were very tasty, simple to cook and super easy to pack for lunches! The low cost was certainly a win and made a very easy start to the week.
